Roasted Lamb with Green Onions and Fresh Spearmint

Lamb with green onions and spearmint is one of the oldest Bulgarian recipes. It is traditionally served for Easter or St. George's day. We made the recipe with shoulder of lamb, but it is just as delicious with lamb shanks or any other piece of lamb you can get.
1 shoulder of lamb (1 1/2 kilos)
5 bunches of green onions (about 1/2 kilo)
2 bunches of fresh mint (about 1 cup)
2 tbs butter
Here is our recipe for oven-roasted lamb with fresh spearmint and green onions:
Wash the lamb and place it in a platter. Put a generous amount of salt and paprika on the meat and massage it in carefully.
Coarsely chop the onions and the mint mix them. Put 3/4 of the mixture in a roasting pan. Put the lamb on top of it.
Separate the butter into small pieces and put them on top of the lamb. Cover the lamb with the remaining onion and mint.
Preheat the oven to 220 C. Cover the dish with aluminum foil and put it in the oven.
In 30 minutes reduce the heat to 180 C.
An hour after that reduce the heat to 150 C and roast for two more hours.
Turn off the oven and let the lamb rest for about 15 minutes.
