An easy and delicious recipe for feta cheese stuffed zucchini as served in Bulgaria. Prepare with as much dill as possible.
ingredients
2 zucchini
1⁄4 cup sunflower oil
1 egg
300 g feta cheese, crumbled
1 cup dill, chopped
method
Preheat oven to 180°C. Lightly coat a baking dish with oil and set aside.
Cut the ends off each zucchini and then slice lengthwise in half. Remove the zucchini pulp using a knife. With a spoon, scoop out the seeds.
In a small bowl beat the egg. Finely chop the zucchini pulp and add to the egg. Add the feta cheese and dill, mix well.
Lightly brush the zucchini with oil. Spread the egg and cheese mixture evenly in the zucchini shells.
Bake for 35-45 minutes depending on how big your zucchinis are. Serve warm or cold.
