Zucchini Fritters by na2na3
Zucchini fritters with lots of parsley, dill and spring onions.
3-4 medium zucchini
100g feta cheese
1 cup parsley, chopped
1 cup dill, chopped
3 spring onions, chopped
1/2 cup flour
Trim and coarsely grate the zucchini. Add salt and set aside for 15-20 minutes.
Place a kitchen towel in a bowl, add the zucchini and squeeze out as much excess moisture as possible.
Transfer zucchini to a bowl. Add the chopped parsley, dill and spring onions. Add the feta cheese, eggs and flour. Mix well.
Heat 1 teaspoon olive oil in a non-stick frying pan over medium-high heat. Form round flat portions of zucchini mixture and place into pan.
Cook for 5-6 minutes each side or until golden and cooked through.
Serve with yogurt.
