Tasty and easy skillet poached eggs with spinach.
1/2 kg spinach
2 spring onions
1 spring garlic
2 tbsp olive oil
salt and black pepper
In a large skillet heat the oil over medium heat. Add the spring onions and garlic and sauté 3 to 5 minutes. Add the spinach. Stir gently and cook until slightly wilted.
Crack the eggs; season to taste with salt and pepper.
Cover and cook for 5 to 8 minutes.
