Baked Spinach Rice

A favorite family meal made with spinach and rice.
1/2 kg spinach
1 1/2 cups white rice
2 spring onions
1 spring garlic
2 tbsp olive oil
Clean and cut the spinach. Chop the spring onions and garlic.
Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the spring onions and garlic. Cook for about 2 minutes, stirring occasionally.
Add the spinach. Stir gently and cook until slightly wilted.
Add the rice and cook for about 2 more minutes.
Transfer mixture to prepared baking dish. Pour enough water to cover the rice. Bake for 40 minutes at 190°C, until top is browned. Serve with yogurt.
