Pumpkin Pie (Тиквеник)

1 butternut squash
1 package filo pastry
100 g walnuts
100 g dried cranberries
oil
sugar to taste
method
Cut and grate the butternut squash.
Heat 1 tsp of oil in a frying pan. Add the squash and simmer for around 10 minutes. Add the roughly chopped walnuts and dried cranberries. Optional: add 1 tsp of sugar.
Spread 1 sheet of filo pastry, brush with a bit of oil and place a second sheet on top. Add 2-3 tbsp of the squash mixture and roll into a cylinder.
Arrange into a spiral in a round baking pan. Brush top with oil. Cover with aluminium foil and bake in a preheated 180 C oven for 45 minutes. Uncover and bake for 5 more minutes.
