Although grilled is the more common way to prepare a bonito, the plakia is more fun to make. Because of all the pretty colors.
4 small (or 2 large) Atlantic bonitos
1 kg onions
salt and pepper
Wash the bonitos, salt and leave in the fridge for half an hour.
Peel and coarsely chop the onions. Chop the pepper.
In a baking sheet place a layer of onions. Add the chopped pepper. Top with some olive oil. Place the fish on top.
Slice the tomatoes and lemon. Place a slice of tomato and some onions in each fish. Arrange slices of tomato and lemon on top.
Bake in a preheated 200°C oven for an hour and a half.
